Mint Matcha Smoothie

 

I'm not going to lie, this matcha smoothie tasted more like dessert than a meal, and that is never a bad thing in my book.  It makes for a great afternoon treat or even a breakfast or lunch when you’re on the go. Just don’t be surprised when it tastes like mint chocolate chip ice cream...

Ingredients

SERVES 2

1/3 cup cashews, soaked in water for at least 30 minutes and drained

2 cups loosely packed spinach 

1-2 scoops vanilla protein powder (I use Garden of Life or Natural Force)

2-3 cups almond milk or hemp milk (more or less to control consistency)

1 frozen banana 

1/4 cup fresh mint leaves

1 tsp vanilla extract 

2 tsp matcha powder

1 tbsp cacao nibs 

1 tsp Bee Pollen (optional)

DIRECTIONS

Blend everything in a high speed blender like a Vitamix. Adjust the milk to control the consistency - less milk will make it more milkshake-like. Top it with bee pollen, unsweetened coconut flakes, and a fresh sprig of farmer's market mint. You could also add sesame seeds, extra cacao nibs, chopped almonds, coconut whipped cream... the point is have fun with your smoothies and make something that feels good to you!
